Real Wasabi™ Beurre Blanc

Prepared Real Wasabi™ powder should not be heated, rather added at the end to preserve its fiery taste. 

Beurre Blanc

 Yield: 4 servings

  • 2T chopped shallots
  • 1 sprig fresh thyme
  • 1/2 t cracked black pepper
  • 1 bay leaf
  • 1/2 c white wine
  • 1/4 c heavy cream
  • 1 stick butter
  • 1 T prepared Real Wasabi powder
  • 1/2 T rice vinegar

In a saucepan simmer shallot, thyme, pepper, bay leaf and white wine. Reduce slowly until dry. Add heavy cream and bring to a boil. Slowly whisk in butter, one piece at a time. Season with salt and pepper, strain, and keep beurre blanc warm. Before plating, combine wasabi and rice vinegar. When serving, drizzle with beurre blanc and follow with wasabi mixture. Excellent with tuna or salmon.
