Under Doug's watchful direction, each handmade solid hardwood sushi board we make, irrespective of style, wood or size, is a work of art with a carefully hand-rubbed oil finish.
Elevated surface via dove-tailed sleds is inspired by the humble, age-old Japanese Geta, but more practical reasons beget this painstaking detail. While making the boards easy to place or gather, the dovetail construction method serves another purpose:
Since solid wood expands and contracts with humidity,
sleds are center pinned (no glue) allowing movement but keeping the board flat.
