Authentic fresh Wasabia japonica rhizomes are renowned for their distinctive flavor and aroma. Unlike most ‘fake’ wasabi products, fresh wasabi offers a complex taste profile with subtle sweetness, mild heat, and lingering umami notes. We currently offer two fresh wasabi varieties, Daruma and Green Thumb:

Package Size

Wasabi rhizomes vary in size and weight. There are approx. 2-4 rhizomes in a 1/2lb, 3-6 rhizomes in a pound.

Use & Storage

To enjoy the full flavor experience of authentic wasabi, follow these simple steps:

Grate the fresh rhizome into a paste using a traditional sharkskin grater or cheese/microplane/kitchen grater.

Wrap paste in plastic food wrap or seal in a small airtight container and set aside for 10-15 minutes, to activate chemistry and develop flavor.

Once the flavor has developed, its ready to enjoy.

Keep the remaining rhizome fresh by storing in an airtight container filled with water and refrigerated, changing out the water daily. Rhizomes may stay fresh for 3-5 days.
