Soba Noodles with Sautéed Shrimp and Creamy Tahini Wasabi Dressing
DRESSING INGREDIENTS:
- 3 tablespoons wasabi powder
- 2 tablespoons warm water (to make wasabi paste)
- 1/3 cup tahini
- 2 tablespoons honey
- 2 tablespoons sesame seed oil
- 3 tablespoons soy or tamari sauce
- 1 clove fresh garlic (crushed)
- 2 tablespoons fresh lime juice
REMAINING NOODLE ASSEMBLY INGREDIENTS:
- 8-ounce, weight dry soba noodles (or favorite noodles or pasta)
- 1/2 Lb. medium shrimp sautéed in ghee or olive oil w/garlic salt/pepper
- 1/3 cup chopped green onions
- 1 red chili pepper, sliced thin
- 1/4 cup chopped fresh basil
- 1 tablespoon sesame seeds, toasted (black or white)
- Optional - shredded cabbage, carrots, Italian parsley
INSTRUCTIONS
- For dressing/marinade, whisk together wasabi powder, warm water, tahini, honey, sesame oil, lime juice, and soy or tamari sauce until well combined. (Note: Makes about 10 ounces. Only half will be used for per 8-ounce package of noodles.)
- Cook noodles according to package instructions. Drain noodles. While still warm, gently toss with 4 ounces of dressing/marinade. Gently! Cover and refrigerate until cooled.
- Once cool, add shrimp, green onions, basil, chili pepper, and toasted sesame seeds.
- Gently toss to incorporate.
